Sausage casserole

It’s weird what reminds us of people, for us Pam’s will always be sausage casserole!

We’d driven up to Wales and Pam knew we’d arrive late, so she cooked us a sausage casserole and it was waiting for us at Jeffreys Road.

After a long drive, a warming scrummy bowl was bliss, ever since then it’s never sausage casserole, it’s Pam’s casserole, it’s something we cook regularly and it will always remind us of her.

Here’s the recipe.

6 pork sausages of your choice.

500ml bottle of good cider.

1 leek

2 sticks of celery

1 tin butter beans

1 tin baked beans.

Chicken stock.

1 tsp mixed herbs.

 

Brown the sausages, then put everything in a slow cooker, adding enough stock to cover.

Cook for at least 5 hours and serve with mash or chunks of bread.
